This Jamaican curry chicken recipe is a guaranteed tasty dish. Curry chicken is not difficult to make but be sure to follow the instructions carefully.

Ingredients

  • 2 Pound chicken

  • 2 tablespoons curry

  • 3 sprigs thyme

  • 1 piece large potato or 2 medium or 3 small

  • 2 teaspoon Salt

  • 2 teaspoon black pepper

  • 1/2 piece scotch bonnet pepper or Trinidad Scorpion Pepper

  • 1 peg ginger (thinly sliced)

  • 1 piece onion

  • 6 cloves garlic

  • 1 teaspoon Pimento seeds (all spice)

  • 1 Pinch sugar

  • 1/4 cup vinegar

  • 1 splash oil

  • 1/2 stick butter

Directions

  • Chop chicken into bite-size pieces then wash thoroughly with vinegar. Rinse in cold water and dry.
  • Add chicken to a bowl. Add half of the chopped onion, 2 springs of thyme, pimento, half of the garlic, ginger, scotch bonnet, black pepper, salt and 1 tablespoon of curry.
  • Rub all ingredients in the chicken and let it marinate, preferably the night before.
  • Add oil to pot. Turn fire to low. Once the oil is hot add the remaining onion, garlic, and Thyme.
  • Once the onions are translucent remove all the ingredients.
  • Set fire to high, once the pot is hot add chicken (shake off all seasoning before adding to pot).
  • Stir chicken frequently. Once the chicken is brown set fire to medium.
  • Start adding the seasonings; ginger, garlic, onions, thyme.
  • Add a quarter cup of water to the pot. Add diced potatoes and stir. Set fire to medium-low.
  • Summer for 20 minutes or until meat is soft.
  • Add the ingredients that were removed in the beginning. Add more salt and pepper if needed.
