2 medium irish potato
1 medium cho-cho
6 cups water
1/2 cups coconut milk
2 stalks scallion
2 sprig thyme
4 small pimento seeds
1 packet cock soup mix
1/4 teaspoon salt
1/4 teaspoons black pepper
1 can gungo peas
1 cup carrots (chopped)
Directions
- Remove skins from the potatoes and cho-ch then add water to the pot and boil. Add the potatoes chocho to the pot once the water starts boiling.
- Add coconut milk, scallion, thyme, pimento seeds, cock soup mix, salt.
- Add can gungo peas and add to the soup mix along with the sliced carrots then set the fire to low.
- Add salt and black pepper if needed.
