Jamaican jerk marinade – that will impress your friends and family. This marinade goes best with my classic Jamaican Jerk Chicken Recipe.

The secret ingredients to any good jerk marinade are cinnamon, pimento and nutmeg.

Ingredients

  • 1 tablespoons ginger, peeled and sliced

  • 1/2 teaspoon ground nutmeg

  • 1/2 piece fresh lime juice

  • 1 tablespoons soy sauce

  • 4 cloves garlic, peeled and smashed

  • 1/2 teaspoon ground cinnamon

  • 1 teaspoon black pepper

  • 1/2 piece scotch bonnet (or any hot pepper) OPTIONAL

  • 1 tablespoon 1 tsp ground allspice (pimento)

  • 3 sprigs scallion

  • 1 1/2 tablespoons brown sugar

  • 1 tablespoon thyme leaves

  • 1 small onion

  • 1 cube Maggie Bouillon or 1 1/2 teaspoon salt

  • 1 1/4 cup water

Directions

  • Combine all ingredients and blend.
  • If needed add more salt for taste..
  • If the marinade is too thick add more water.
  • Place in a container and leave in the fridge.
