Peanut drops are similar to Coconut Drops are classic Jamaican desserts. It is quick, simple and very easy to make.

Substitutes

  1. SUGAR: for those who are diabetic you can substitute brown sugar with; stevia, coconut sugar, aspartame, or organic maple syrup (with no corn syrup included).
  1. NUTS: you can use almonds, cashews, macadamia nuts, walnuts, Brazilian-nuts or just about any nuts.

Ingredients

  • 2 cups roasted peanuts

  • 5 tablespoons of shredded ginger (or to taste)

  • 3 cups dark sugar

  • 1 cup water

Directions

  • Boil water on high then and add sugar
  • Add peanuts and ginger
  • After water has evaporated turn off the heat
  • Place a sheet of parchment paper on table then use the spoon to scoop out the peanuts and place on the sheet
  • The peanuts should be about 1 inch to 2 inches apart
  • Let the peanuts cool for 30 minutes
