Saltfish Spinach Flitters

Quick and easy Saltfish Spinach Flitters. Ingredients include spinach, saltfish, water and scallion. This dish can be made on the fly before work.

Equipment

  • Mixing bowl
  • Wooden spoon
  • Frying pan
  • Large strainer

Ingredients

  • 1 cup spinach ((finely chopped))
  • 1 ¼ cups flour
  • 1 tsp black pepper ((a pinch))
  • ¾ cup saltfish
  • ¾ cup water
  • 2 stalk scallion ((chopped))

Instructions 

  • In a large bowl add half a bag of finely chopped spinach, 1-2 scallion, pepper and Saltfish
  • Boil saltfish for 3 minutes. Wash Saltfish in cold water. Use fingers to remove any bones as you wash.
  • Add 1 1/4 cup flour and 3/4 cup water. Mix until the batter is thick. The batter should not be too thick or too thin. If the batter is too thin add more flour, too thick add water.
  • Set fire to medium-high and add oil
  • Turn heat to medium-low and add the batter. Turn the flitters once they are golden brown
  • Serve with eggs, tea/coffee, and tomato, or simply eat them as is
