Ingredients

  • 3 medium sweet potatoes

  • 2 cup(s) coconut milk creme

  • 3 cup(s) water

  • 1/4 cup(s) raisins, soaked

  • 2 cup(s) brown sugar

  • 3/4 cup(s) cornmeal

  • 1/4 cup(s) flour

  • 2 teaspoon(s) mixed spice/nutmeg, grated

  • 2 teaspoon(s) vanilla essence

  • 1/4 teaspoon(s) salt

  • 1 tablespoon(s) margarine

  • 2 tablespoon(s) white rum

  • 2 tablespoon(s) lime juice

Directions

  • Preheat oven to 165°C (330°F).
  • Grate potatoes and set aside.
  • Combine Coconut Milk and water; add to the grated potato and mix well.  Add remaining ingredients and mix well except for the margarine, rum and lime juice.
  • Scrape mixture into a well greased pan and dot with Grace Hello Soft Margarine and bake for about 2 hours.
  • Remove cake from oven and allow to cool. Combine lime juice and rum and pour over pudding before serving.
