1 1/4 pounds baking flour
2 ounces margarine, melted
1 tablespoon vanilla
2 whole large eggs or 3 medium, 4 small
1 1/2 cups grated coconut
1 packet powdered Milk
1 ounce raisins, soaked (dried fruits can be substituted)
12 ounces water (milk can be use for a more creamy taste)
1 teaspoon mixed spice
1 teaspoon baking powder
12 ounces brown sugar
Directions
- Combine the following ingredients: flour, sugar, milk powder, coconut, raisins, baking powder, and mixed spice.
- In a separate bowl add and whisk eggs, water and vanilla along-with butter
- Mix dried ingredients and slowly add the wet ingredients
- Bake at 180°C (350°F) for about 30 minutes
