Ingredients

  • 1 1/4 pounds baking flour

  • 2 ounces margarine, melted

  • 1 tablespoon vanilla

  • 2 whole large eggs or 3 medium, 4 small

  • 1 1/2 cups grated coconut

  • 1 packet powdered Milk

  • 1 ounce raisins, soaked (dried fruits can be substituted)

  • 12 ounces water (milk can be use for a more creamy taste)

  • 1 teaspoon mixed spice

  • 1 teaspoon baking powder

  • 12 ounces brown sugar

Directions

  • Combine the following ingredients: flour, sugar, milk powder, coconut, raisins, baking powder, and mixed spice.
  • In a separate bowl add and whisk eggs, water and vanilla along-with butter
  • Mix dried ingredients and slowly add the wet ingredients
  • Bake at 180°C (350°F) for about 30 minutes
