Callaloo is not indigenous to the Caribbean but it might as well been.

Callaloo was introduced to the Caribbean during slavery, who’s “roots” can be traced back to west Africa. This green leafy plant resembling spinach was brought aboard ships via slave trade routes. It is not clear if the slavers brought it onboard or the slaves themselves smuggled the seeds on the ships. The transportation of Callaloo and other foods native to Africa is still a mystery on how it reached the Caribbean.

Grow

Callaloo must be sown about 3 inches apartand must have enough depth to send their many roots. Callallo can be grown in pots or sown directly in the ground. Once the Callaloo is fully grown the top must be snipped allowing the plant toproduce more leaves.

Ingredients

  • 2 bunch Callaloo

  • 1 tsp Black Pepper

  • 1 1/2 pounds Salt or Salt FIsh

  • 1 piece small Onion

  • 1/2 stick Butter

Directions

  • Add oil to heated pan
  • Add 1 small onion and let it cook on low until the onion looks translucent
  • Add chopped callalo, stir and add butter
  • Add salt and pepper
  • Once the callalo shrinks

Notes

  • If using salt-fish instead of salt. First boil the salt-fish then rinse in cold water. Make sure to break up the salt-fish with fingers and remove any bones. Fry the salt-fish first then add onion, callaloo and pepper.
