Chicken soup is a classic Jamaican meal typically done on a Saturday or sometimes Sunday. Chicken soup recipes can be found all over the internet however this Saturday soup recipe will blow your mind.
Jamaicans love their Saturday soup (Satdeh) and this chicken soup will excite your taste buds.
Ingredients
- 1 1/4 lbs chicken
- 2 large carrots
- 2 lbs pumpkin
- 2 cups flour
- 1 lb yellow yam (Jamaican)
- 1 lbs cocoa (yutica)
- 7 stalks of scallion
- 7 sticks of thyme
- 1 tsp allspice seeds
- 1 scotch bonnet pepper (optional)
- 1 tsp dried parsley
- 1 tsp pepper flakes
- 1 tbsp salt (or a bouillon cube)
- 1 1/2 – 2 packets cock noodle soup mix
Instructions
- Strip and wash chicken then add it to a pot, roughly 3 quarts of water along with a tablespoon of salt and 2 packets of noodle soup mix.
- Once pot starts boiling add dumplings and all the remaining ingredients.
- Boil for 20 minutes the crush 1 scallion stalk and finely chop then add it to the pot along with two more sprigs of thyme.
- Let pot boil for another 10-15 minutes. Taste and add salt or bouillon cube if needed.
