Jamaicans love their Saturday soup (Satdeh) and this chicken soup will excite your taste buds.

Ingredients

  • 1 1/4 lbs chicken
  • 2 large carrots
  • 2 lbs pumpkin
  • 2 cups flour
  • 1 lb yellow yam (Jamaican)
  • 1 lbs cocoa (yutica)
  • 7 stalks of scallion
  • 7 sticks of thyme
  • 1 tsp allspice seeds
  • 1 scotch bonnet pepper (optional)
  • 1 tsp dried parsley
  • 1 tsp pepper flakes
  • 1 tbsp salt (or a bouillon cube)
  • 1 1/2 – 2 packets cock noodle soup mix

Instructions 

  • Strip and wash chicken then add it to a pot, roughly 3 quarts of water along with a tablespoon of salt and 2 packets of noodle soup mix.
  • Once pot starts boiling add dumplings and all the remaining ingredients.
  • Boil for 20 minutes the crush 1 scallion stalk and finely chop then add it to the pot along with two more sprigs of thyme.
  • Let pot boil for another 10-15 minutes. Taste and add salt or bouillon cube if needed.
