Jamaicans love their Saturday soup (Satdeh) and this chicken soup will excite your taste buds.
- 1 1/4 lbs chicken
- 2 large carrots
- 2 lbs pumpkin
- 2 cups flour
- 1 lb yellow yam (Jamaican)
- 1 lbs cocoa (yutica)
- 7 stalks of scallion
- 7 sticks of thyme
- 1 tsp allspice seeds
- 1 scotch bonnet pepper (optional)
- 1 tsp dried parsley
- 1 tsp pepper flakes
- 1 tbsp salt (or a bouillon cube)
- 1 1/2 - 2 packets cock noodle soup mix
Strip and wash chicken then add it to a pot, roughly 3 quarts of water along with a tablespoon of salt and 2 packets of noodle soup mix.
Once pot starts boiling add dumplings and all the remaining ingredients.
Boil for 20 minutes the crush 1 scallion stalk and finely chop then add it to the pot along with two more sprigs of thyme.
Let pot boil for another 10-15 minutes. Taste and add salt or bouillon cube if needed.
