2 pieces snapper fish
1/4 cup white vinegar
1 tsp salt
1 tsp black pepper
3 clove garlic
2 bunch callaloo
2 tbs vegetable oil
1 piece scotch bonnet pepper
1 piece small onion
3 springs thyme
3 springs scallion
Directions
- Wash fish in vinegar then rinse and pat dry then make three slices in the fish.
- Finely chop; callaloo, garlic, onions, scallion and pepper.
- Rub outside of the fish with salt and black pepper. Fry fish on medium high heat.
- While the fish is frying in a seperate pot add oil and set to medium. Add onion, scallion, garlic, pepper, and thyme and saute for 5 minutes then add callaloo and cook until the callaloo shrinks more than 50% in size.
- Once the fish is golden brown remove from fire and stuff the fish with the callaloo. This meal is best served with white rice or rice and peas (click for recipe)
