This classic Haitian Pan Roasted Chicken dish will impress your Haitian friends and make the others jealous. This is a simple, quick and easy dish that can be done by beginners and advance home chefs alike.

Ingredients

  • 1/2 Onion

  • Garlic Gloves

  • Spring Onions

  • 2 Limes

  • 2 Lime Zest

  • 3 cup Breadcrumbs

  • 1 Spring of Thyme

  • 1 TS Nutmeg

  • 2 TS Granulated Sugar

  • Plantain

  • Butter

  • Tomatoes

  • 2 cup Pumpkin

  • 3-4 cup Rice

Directions for pumpkin rice

  • Boil 2 cups pumpkin with thyme and salt to taste
  • Add 3 to 4 Cups of rice after the pumpkin starts boiling
  • Cook until rice is soft and fluffy

Directions

  • Combine: onion, spring onions, garlic, thyme, breadcrumbs, nutmeg, lime and lime zest, as well as granulated sugar
  • Saute until onions are translucent

Directions For Stuffing

  • Cut and fry plantain in butter
  • Add tomatoes, season with salt and black pepper
  • Lift Chicken’s skin and stuff plantain and tomatoes, also place stuffing inside the chicken
  • Rub chicken with butter and tie legs then sprinkle with black pepper
  • Bake for 30 minutes at 340 degrees
