This classic Haitian Pan Roasted Chicken dish will impress your Haitian friends and make the others jealous. This is a simple, quick and easy dish that can be done by beginners and advance home chefs alike.
Ingredients
1/2 Onion
Garlic Gloves
Spring Onions
2 Limes
2 Lime Zest
3 cup Breadcrumbs
1 Spring of Thyme
1 TS Nutmeg
2 TS Granulated Sugar
Plantain
Butter
Tomatoes
2 cup Pumpkin
3-4 cup Rice
Directions for pumpkin rice
- Boil 2 cups pumpkin with thyme and salt to taste
- Add 3 to 4 Cups of rice after the pumpkin starts boiling
- Cook until rice is soft and fluffy
Directions
- Combine: onion, spring onions, garlic, thyme, breadcrumbs, nutmeg, lime and lime zest, as well as granulated sugar
- Saute until onions are translucent
Directions For Stuffing
- Cut and fry plantain in butter
- Add tomatoes, season with salt and black pepper
- Lift Chicken’s skin and stuff plantain and tomatoes, also place stuffing inside the chicken
- Rub chicken with butter and tie legs then sprinkle with black pepper
- Bake for 30 minutes at 340 degrees
