Ingredients
- 1 pound potato (bite size pieces)
- 3 whole Hard boiled eggs
- 1 cup Mixed vegetables ((frozen or can))
- ¼ cup mayonnaise
- 1/2 teaspoon mustard
- 1/4 teaspoon smoked paprika
- salt and pepper to taste
Instructions
- Bring a pot of salted water to a boil.
- Add potatoes and cook until tender but still firm to the touch, about 5-10 minutes.
- Drain water.
- Chop eggs and add to the potatoes
- In a medium bowl combine the chopped onions, mayonnaise, sour cream, Heinz dressing , relish, Cajun spice, mustard, and mayonnaise.
- Mix well and add to the potato and egg mixture.
- Adjust to taste with salt and pepper.
- Refrigerate until ready to eat.
