This incredible Jamaican Style Potato Salad is creamy, luscious, tasty and filled with nutrients. It is an easy to make comfort food that is sweet, salty with a slight tangy after taste. Served as a side dish, it is hearty and filling, a number one pick at Jamaican’s Sunday Dinner table.

Ingredients

  • 1 pound potato (bite size pieces)
  • 3 whole Hard boiled eggs
  • 1 cup Mixed vegetables ((frozen or can))
  • ¼ cup mayonnaise
  • 1/2 teaspoon mustard
  • 1/4 teaspoon smoked paprika
  • salt and pepper to taste

Instructions 

  • Bring a pot of salted water to a boil.
  • Add potatoes and cook until tender but still firm to the touch, about 5-10 minutes.
  • Drain water.
  • Chop eggs and add to the potatoes
  • In a medium bowl combine the chopped onions, mayonnaise, sour cream, Heinz dressing , relish, Cajun spice, mustard, and mayonnaise.
  • Mix well and add to the potato and egg mixture.
  • Adjust to taste with salt and pepper.
  • Refrigerate until ready to eat.
