This incredible Jamaican Style Potato Salad is creamy, luscious, tasty and filled with nutrients. It is an easy to make comfort food that is sweet, salty with a slight tangy after taste. Served as a side dish, it is hearty and filling, a number one pick at Jamaican’s Sunday Dinner table.
- 1 pound potato (bite size pieces)
- 3 whole Hard boiled eggs
- 1 cup Mixed vegetables ((frozen or can))
- ¼ cup mayonnaise
- 1/2 teaspoon mustard
- 1/4 teaspoon smoked paprika
- salt and pepper to taste
Bring a pot of salted water to a boil.
Add potatoes and cook until tender but still firm to the touch, about 5-10 minutes.
Drain water.
Chop eggs and add to the potatoes
In a medium bowl combine the chopped onions, mayonnaise, sour cream, Heinz dressing , relish, Cajun spice, mustard, and mayonnaise.
Mix well and add to the potato and egg mixture.
Adjust to taste with salt and pepper.
Refrigerate until ready to eat.
