Ingredients

  • 1 pound salmon fillet

  • Salt

  • Black pepper

  • ½ tsp. dill

  • 1 maggi bouillon (fish or regular flavor)

  • 2 tbsp. butter

  • 1 medium onion sliced

  • ½ red bell pepper sliced

  • ½ carrot (sliced)

  • Fresh thyme

  • 4 tbsp.mango chutney or ½ cup chopped ripe mango

  • Scotch bonnet pepper

  • Oil

  • Coconut powder (or coconut milk)

Directions

  • Season salmon with salt, black pepper, dill, maggi then let it marinate.
  • Heat pan to medium then add a splash of oil then butter
  • Once pan is hot add salmon and cook until one side is brown
  • Once one side is brown flip the salmon and remove when brown
  • Once both sides are brown, reduce the heat to low and remove the salmon
  • Add onions, bell pepper, mango, carrots, half of the coconut powder or milk and let it simmer
  • Once everything is caramelized add salmon and the other half of the coconut powder or milk
  • Let is simmer for 5 minutes and serve
