1 pound salmon fillet
Salt
Black pepper
½ tsp. dill
1 maggi bouillon (fish or regular flavor)
2 tbsp. butter
1 medium onion sliced
½ red bell pepper sliced
½ carrot (sliced)
Fresh thyme
4 tbsp.mango chutney or ½ cup chopped ripe mango
Scotch bonnet pepper
Oil
Coconut powder (or coconut milk)
Directions
- Season salmon with salt, black pepper, dill, maggi then let it marinate.
- Heat pan to medium then add a splash of oil then butter
- Once pan is hot add salmon and cook until one side is brown
- Once one side is brown flip the salmon and remove when brown
- Once both sides are brown, reduce the heat to low and remove the salmon
- Add onions, bell pepper, mango, carrots, half of the coconut powder or milk and let it simmer
- Once everything is caramelized add salmon and the other half of the coconut powder or milk
- Let is simmer for 5 minutes and serve
