When life gives you plantain, make plantain tarts!
Equipment

Ingredients
Pastry
- 2 cups all-purpose flour
- 1 tsp salt
- ¼ cup cold butter, cut into 1/2 inch pieces
- 1 whole egg, beaten
- 3 tbsp shortening, chilled and diced
- 1 tbsp ice-cold water
Filling
- 3 whole 3 very ripe (black) plantains
- ¼ cup ¼ cup white sugar
- 1 tsp 1 teaspoon vanilla extract
- 1 tsp 1 teaspoon grated nutmeg
- 2 drops red food coloring (Optional)
- 1 whole white (beaten)
- 1 white confection sugar (for decoration )
- 1 white or brown sugar (for light dusting )
- 1 whole lime / lemon (squeezed)
Instructions
- Step 1Add together all dry ingredients. Fold in the butter and shortening. Mix until the dough looks somewhat sandy.
- Add egg and remaining wet ingredients. Stir, fold and need then wrap and chill for at least 2-4hours.
- While dough is chills, peel and slice plantains. Add into a saucepan with one squeezed lime and a little water or favorite sauce . Cook until tender then remove and mash plantains, adding sugar, vanilla, nutmeg, and red food coloring (optional). Let it cool. Preheat oven to 350 degrees F (175 degrees C).
- Roll dough into 1/4-inch thick, 4 or 5 inches round pieces, a cookie cutter can also be used. Add a tbsp of plantain filling into the center of each circle, then fold in half and Place the tarts on a baking sheet, brush with beaten egg white, and sprinkle with white or brown sugar.
- Bake for 20 to 25 minutes or until golden brown. Allow tarts to cool to room temperature then dust a little convectional sugar (totally optional)
