Authentic Jamaican Jerk Chicken Recipe that you must try. This recipe tackles multiple ways of cooking jerk chicken.
With Homemade Jerk Marinade
- 1 1/4 pound chicken
- 4 1/4 cup water
- 3/4 cup Homemade Jerk Chicken Marinade
- 1/2 cup vinegar
Without Homemade Marinade
- 1 cube maggie chicken bouillon
- 3 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 whole medium onion (finely chopped)
- 1 1/2 tablespoon jerk seasoning
- 1 teaspoon browning
- 1 teaspoon cinnamon
- 1 teaspoon brown sugar
Add vinegar and water to a bowl then wash chicken thoroughly. After washing, drain the chicken and pat dry with a paper towel or clean cloth.

Pour homemade marinade over chicken and let it sit for 15 minutes or more. If you have no home-made marinade use grace or walkerswood jerk seasoning along with onion, soy sauce, cinnamon, maggie cube, browning, and brown sugar.
Notes: if you have no homemade marinade, you can use your favorite jerk chicken seasoning, I recommend Zaxby's Caribbean jerk sauce, Grace Foods, or Walkerswood Seasoning.
When using jerk seasoning I advise using no more than 2 tablespoons, jerk seasonings have strong flavors, and using too much will overpower the dish.
