- 1 whole small mandarin ((or tangerines – seeds removed))
- 1 whole small tomato (diced)
- 1 bunch bunch mix vegetables or a head of lettuce
- 1 whole small avocado (Jamaican pear — (diced))
- 8 pieces watermelon (diced)
Fruit Dressing
- 3 tbsp olive oil
- 1 pinch salt
- 1 pinch black pepper
- 1 tsp sugar or honey
- 1 1/2 tsp lime or lemon
- 4 tbsp apple cider vinegar
In a large bowl add segmented mandarins or tangerines along with avocado, tomato, watermelon, and lettuce.
Toss the salad ensuring all ingredients are properly distributed.
Salad Dressing
Combine apple cider vinegar with lime juice, olive oil and whisk until the liquid looks slightly creamy.
Add sugar or honey, black pepper and salt to your desired taste
