Ingredients

  • 2 tablespoons olive oil
  • ¼ cup chopped Vidalia onion
  • 3 cloves garlic (minced)
  • 3 pounds young green jackfruit packed in water (drained)
  • 2 cups barbecue sauce (or more to taste)
  • 1 teaspoon chilli powder (more or less)
  • 1/2 cup vegetable broth
  • 1 pinch cayenne pepper (for flavor)
  • ½ teaspoon smoked paprika
  • 1 pinch cumin (for flavor)
  • ½ teaspoon all spice (more or less)
  • 1 bag baguette bread or hamburger buns

Toppings

  • 4 strips vegan bacon (more if needed)
  • 2 ounce sautéed mushrooms (more or less)

Instructions 

  • Warm up oil in a spacious skillet over medium heat. Sauté onions and garlic until they achieve a slight softness, typically around 3 minutes. Introduce the jackfruit, stirring and cooking until it gains a light brown hue and sheds most of its moisture, an estimated 10 minutes.
  • Shift the jackfruit mixture into a slow cooker and generously coat it with barbecue sauce. Cover and set the slow cooker to Low, stirring intermittently. Allow the jackfruit to cook until it easily shreds with a fork, typically around 6 hours.
