- 1 large carrots (diced)
- 3 sprigs scallion
- 1 teaspoon sesame oil
- 1 can sweet peas
- 1/2 medium sweet peppers (diced)
- 1 medium onion
- 2 cloves garlic (minced)
- 1 teaspoon ginger (minced)
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 3 medium eggs (optional)
- 3 sprigs thyme
- 2 1/2 cups rice (cooked)
- 1 small scotch bonnet (or any equally hot pepper)
- 1 pinch salt
- 2 teaspoons chicken bouillon
- 1 teaspoon jerk sauce
- 1/2 packet coconut powder
Heat frying pan or wok on lowheat then ad garlic giner, scotch bonnet an onion. Cook on low untill the onions are soft.
Add eggs, carrots, thyme, peas, and scallions.
Add rice and stir (one cup at a time)
Add Sesame oil, soy sauce, jerk sauce and stir.
Turn heat to medium-high and stir then add bouillon and stir.Add half a packet of coconut powder and stir.
Let it cook for 4-6 minutes or until done
Taste and add more soy sauce, salt or bouillon to better fit taste.
