Healthy Jamaican Coleslaw is sweet and tangy, with a slight kiss of spiciness. Some people also like to use mayonnaise but traditionally many Jamaicans prefer the clean flavour of a vinaigrette dressing with a zing! A fantastic flavorful alternative to the usual creamy coleslaw. The perfect side to anything off the grill!

Ingredients

  • 2 Tbsp vegetable oil
  • 2 Tbsp cider vinegar or white wine vinegar
  • 2 tsp dijon mustard
  • 2 tsp granulated sugar
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic (minced)
  • 6 cups shredded green cabbage
  • 1 carrot (shredded)
  • 2 green onions (chopped)

Instructions 

  • In large bowl, whisk together oil, vinegar, Dijon mustard, sugar, salt, black pepper and garlic
  • Add cabbage, carrot and green onions
  • Toss to coat
  • Let stand for 15 minutes before serving
