For those of you who doesn’t own a grill I have the perfect Jamaican jerk chicken that is done in the oven. This baked jerk chicken is a must try!

Jamaica Café sweet sauce
- 3 1/2 lbs chicken
- 1 tbsp all-purpose seasoning
- 1 tbsp chicken-bouillon powder
- 1 tsp black pepper
- 1 tsp onion powder
- 1/2 tbsp paprika
- 1 1/2 tsp browning
- 1/2 tbsp liquid smoke
Jerk Sauce Recipe
- 6 stalk scallions
- 8 springs fresh thyme
- A tumb size fresh ginger
- 1 tbsp allspice seeds/pimento seeds
- 1 scotch bonnet pepper or for less spice (1 tsp pepper flakes)
- 1 medium onion
- 1 tbsp oil to blend it freely.
Add all the seasonings to blender. Blend on high for at least a minute. Pour over the chicken and let is marinate for at least an hour or overnight.
Grease a pan and pour chicken and marinate in it. Bake for 50 minutes at 375 degrees.
45 minutes into the cooking add 2 tablespoons of your favorite sweet sauce or ketchup and finish baking for 5 minutes.
