Tomato Basil Pesto

Tomatoes and basil are perfect together. Use this recipe in pasta, vegetable (roasted), bulgar or just about any dish that calls for "tomato sauce".

Equipment

  • 1 Food processor

Ingredients

  • 1 clove garlic
  • 10 whole cherry tomatoes ((roasted))
  • cup pine nuts
  • cup parmesan cheese (grated)
  • cup olive oil (extra virgin)
  • 3 cups basil leaves (tightly packed)
  • 1 pinch salt ((to taste))

Instructions 

  • In a food processor, combine all ingredients except the basil, pulse till smooth. When all the ingredients are well combined, and the basil and pulse for a minute.
