Substitutes

  1. SUGAR: for those who are diabetic you can substitute brown sugar with; stevia, coconut sugar, aspartame, or organic maple syrup (with no corn syrup included).
  1. NUTS: you can use almonds, cashews, macadamia nuts, walnuts, Brazilian-nuts, or just about any nuts.
  1. COCONUT: I wouldn’t advise substituting coconuts, it is the star of the show but if you really hate coconut or are allergic you can use any shredded dry fruits or shaved nuts.

Ingredients

  • 4 cup water

  • 2 cup dry coconut, diced (or as desired)

  • 1 1/2 cup dark sugar

  • 1 tablespoon ginger (or to taste)

Directions

  • Dice coconuts
  • Boil water, add diced coconut and boil on low-medium for about 30- 40 minutes.
  • Add: sugar and ginger and continue boiling until the water evaporates and makes a thick sauce.
  • Drop a tablespoons full on wet parchment paper.
  • Cool for 45 minutes to an hour or until drops is set and firm.
