Simple and easy gluten free chocolate chip cookie everyone can do. This cookie recipe is healthy and can be made even more healthy by substituting the sugar with honey.

Ingredients

  • 2 ¼ cups coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 tablespoons unsalted butter (at room temperature)
  • ½ cup raw brown sugar (or ¼ of honey)
  • 1 large egg
  • 2 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • ½ cup chocolate chips
  • ¼ teaspoon nutmeg

Instructions 

  • In a medium bowl, whisk together the coconut flour, salt, baking soda, nutmeg, and sugar.
  • In a large bowl, whisk together the butter, heavy cream, vanilla and egg. Add in the flour and continue to mix. Add chocolate chips and fold with a spoon or spatula. Place the mixture in the refrigerator for atleast a couple hours or preferably overnight.
  • Preheat the oven to 350°F. Line a sheet pan with parchment paper.
  • Scoop out cookie dough and place it on the sheet. Gently flatten the dough and bake the cookies roughly 15-20 minutes or until they are brown.
