Ingredients

  • 18 cups water

  • 3 cans red peas (or 3 cups dried red peas soaked until soft)

  • 1 pound salt beef

  • 1 pound pigstail

  • 4 cloves garlic

  • 5 whole pimento seeds (crushed)

  • 1/2 pound yellow yam

  • 1 pound coco yam

  • 1/2 pound sweet potato

  • 1 can coconut milk

  • 2 stalks scallion

  • 1 sprigs thyme

  • 1 whole scotch bonnet pepper (use to your own discretion)

  • 1 packet cock soup

  • 1 packet bouillon cubes (add more if needed)

  • 1 1/2 cups flour

  • 1/2 cups water

Directions

  • Boil the pigstail to remove some of the salt then add the pigstail to a pressure cooker along with garlic, pimento, and thyme, place water in the pot that will be 1/2 an inch above the pigstail. Pressure pigstail on high heat for 10 – 15 minutes for stovetop pressure cookers or 20 to 25 for electric pressure cookers.
  • Release the steam out the pressure cooker and remove the pressure cooker from the stove immediately placing it in the sink with the cold water running over it. Be sure not to jerk the pressure cooker too much. If using an electric pressure cooker just let out the steam and remove it.
  • Place pressure cooker pot back on the fire and reduce the heat to medium. Place a kettle full of water on the fire and we will get back to this later on.
  • Dumplings
  • While the kettle (or medium pot of water) boils, add water to the flour and kneed it into a dough. After you have a soft but not too sticky dough roll them into spinners (spherical shape).
  • Once the kettle boils up pour it into the pot and add dumplings to the pot.
  • Peas Soup
  • When everything starts boiling add all the ground provisions; yellow, yam, coco, sweet potato as well as scotch bonnet pepper the pot.
  • Wash salted beef thoroughly (appx. 3-4 times) to remove some of the salt then add the salt beef to the boiling water.
  • Add the cans of red peas along with the packet of cock soup, bouillon cubes, and can coconut milk.
  • Boil for 20 minutes.
  • After 20 minutes add scallion and then taste the soup and add more bouillon cubes or salt if needed.
